In this scalding summer heat, my body calls for cooling foods. In this series, we will dive into super simple recipes for summertime. And do not underestimate the deliciousness of these meals and snacks. My recipes do focus on nutrition, yes, but taste and simplicity take a close 2nd and 3rd. This post creates a super simple veggie Sammy, i.e. sandwich, using zucchini as the bread – light, cool and refreshing.

Rid your brain of the myth that healthy food takes long to prepare or that it is boring and tasteless. I’m quite certain that if I went into my kitchen to prepare a cheeseburger and fries, it would take me a long time to do so. In addition, I would feel like garbage for a couple days.

Super Simple Veggie Sammy

Ingredients:
1 Zucchini
1 Avocado
1 Tomato
Few basil leaves
Pinch sea salt

1. Slice zucchini lengthwise using mandolin on #3 thickness. Cut slices in half and use as bread.
2. Smash avocado onto the zucchini pieces with fork, add tomato slice, sprinkle sea salt, add basil leaf and add top layer of zucchini.
3. Enjoy!

Note: if you have leftover chickpea burgers just hanging out in the fridge, add to your Sammy for a protein boost!
